I got this knife for my wife, along with the 8.2 inch Gyutou. Now she like doing the prep work! The santoku's blade has a thin profile and an extremely sharp edge. It just glides effortlessly through the food. Great feel, great balance, easy to sharpen and maintain. Although we only prepare meals 3 to 4 times a week, I feel the edge retention is more than adequate for the home cook. Great price point for us amateurs.
