I have been a hibachi chef for 21 years. I trained with Benihana of Tokyo in 1988 and am very picky when it comes to my knives. This knife is great for cooking Teppan style. It' super thin blade and lightweight construction make it one of the best knives I have ever used. (and I have used a lot!) I have nothing bad to say about this highly refined tool. It slices through meat and vegetables as though they were warm butter. It is a beautiful piece to look at and a joy to use. Five stars are not enough to rate this first class piece of the finest cutlery.

This knife is excatly what I was looking for. Very light weight and sharpens really easy. Great for many different chopping tasks.
