What can I say???? Not enough, obviously. These are absolute joy to use. Very easy on the hands. Own Shuns and Shun Elite and they do not compare. Looking forward to getting the 9.4" Gyuto and Slicer and adding them to my Misono UX-10 Collection.

Beautiful knife and couldn't wait to get it when waiting for it in transit. After all the research I did with co-workers and friends in the industry time and time again they said their favorite brand and knife was the misono ux10. It is just a great and sexy knife. Love it just wish it kept an edge a tad longer but with the amount I use it that's understandable. This is the knife I use for basically everything the six days a week I work.

Bought my 260mm knife 6 months ago and it has not let me down you can shave with it right out of the box. I can put it through very rigorous slicing, chopping and it will retain its edge for days on end. Once a week I will polish the edge to its extreme sharpness. I can literally shave with it. With that said it can handle cutting anything with ease. Highly recommended though the size is a preference thing. It is expensive but worth every penny. Korin is the best place to get your Japanese knives.

I love this knife, but I think I bought it one size too small. I have the 8 inch and it's a bit small for my hand and there isn't much of a heel, I have to hold it a bit differently than other knives. If it wasn't for the huge price difference I'd buy the 9 inch right now. Even though it's a bit small, it's still my favorite knife, you know what they size, it's all about the motion of the ocean.
