Comments about 0 Masamoto Virgin Carbon Steel Sujihiki:

I have the 10.5" and I must say this has to be one of the best knives I have ever owned. Stays sharp, easy to handle, beautiful finish on blade and handle. The only con is that I am able to get it too sharp, so I have to "dull" it before fileting fish, to not go straight through the skin. It is carbon steel so it does require care.
