Great Knife. After using it i can't live without it. It replaced my entire Knife kit. i even clean salmon with it.

I use this item almost daily. I am still working my way up in the culinary ladder, but I am part vegetable prep cook and part Garde Manager Chef. I am not gonna lie this knife dulls fast, but that is the only negitive I can give it. It feels so good in my hand that any other knife feels out of place. I hae been useing this knife for 1 year now, and it is just as good as the day I purchased it. I love the bevils when I am cutting Squash it just flys off of it.

This knife has such a solid feel to it. Not only does the dimples on the knife really work but the sharpness of the egde is wonderful. I like a knife with some weight to it this is why I like this knife so much. Has everything I was looking for.

I've had the 10.5" chef knife for a little over a year and really do enjoy working with it on a daily basis. I am a professional chef that really appreciates quality cutlery. The Glestain sharpens easy and can stay sharp for two weeks of heavy usage, but it does tend to be a bit softer steel and can chip easily when one of my caveman cooks grab it to use for chopping. German knives like Wustof Classics, are the better choice for a "line knife", because of their heft and their ability to handle abuse, but the Japanese knives can't be beat for control, detail, and amazing sharpness that can be achieved. My only real gripe is that you can see that the handle and blade are not forged together, they are welded instead. This does seem to be a common practice among the western style Japanese blades from most companies. All in all though, I enjoy every chance I get to use this overall excellent tool.
